印式吞拿魚 – Indonesian Marinated Tuna


材料
120克 新鮮吞拿魚
少許 橄欖油

調味料
5克 薑
5克 蒜頭
5克 南薑
6克 辣椒
10克 薑黃粉
1/4茶匙 蝦膏
20毫升 酸子汁
3片 檸檬葉

做法
1.將所有調味料放入攪拌機攪碎
2.燒熱少許橄欖油,將做法 (1) 的調味料煮1分鐘,加入酸子汁及少許清水,待冷卻
3.將 (2) 料塗抹於吞拿魚表面,用保鮮紙包裹,放入雪櫃冷藏30分鐘
4.燒熱少許菜油,將吞拿魚表面煎至香脆,置室溫待3分鐘,切片後上碟便可

Ingredient
120 g fresh tuna

Seasoning
5 g ginger
5 g garlic
5 g Thai ginger
6 g chilli
10 g turmeric
1/4 tsp shrimp paste
20 ml tamarind juice
3 pcs lemon grass

Cooking Method
1.Blend all seasonings.
2.Heat some olive oil to cook seasonings for 1 minutes and add in tamarind juice and some water. Cool down.
3.Brush (2) on the tuna fish and wrap with food wrap. Then, fringe for 30 minutes.
4.Heat some vegetable oil to pan-fry tuna fish until crispy. Stay at room temperature for 3 minutes. Slice and ready to serve.

Mga Sangkap
120 gramo sariwang.Tuna
Kaunting olive oil

Panimpla
5 gramo luya
5 gramo bawang
6 gramo tumeric
3 piraso lemon grass
1/4 kutsarita bagoong
20 ml katas ng sampalok

Paraan ng pagluluto
1.Ihalo ang lahat ang panimpla.
2.Maginit ng olive oil at iluto ang panimpla ng 1 minuto ihalo ang katas ng sampalok at kaunting tubig. Itabi at palamigin ito.
3.Ipahid ito sa Tuna at balutin ito at ilagay sa refrigerator ng 30 minutos.
4.Magpainit ng manitika sa kawali. Iprito ang Tuna hanging maging malutong at itabi ng 3 minutos. Ihain.

Bahan
120 gr ikan tuna segar
Sedikit minyak zaitun

Bumbu-Bumbu
5 gr jahe
5 gr bawang putih
5 gr lungkuas
6 gr cabe
10 gr bubuk kunyit
1/4 sdt terasi
20 ml jus asam
3 lembar daun jeruk

Cara Memasak
1.Tumbuk semua bumbu.
2.Panaskan sedikit minyak zaitun untuk menumis (1) selama 1 menit dan masukkan jus asam dan sedikit air. Dinginkan.
3.Oleskan (2) pada ikan tuna dan bungkus dengan pembungkus makanan. Kemudian, masukkan dalam kulkas selama 30 menit.
4.Panaskan sedikit minyak sayur untuk menggoreng ikan tuna hingga kering. Angkat dan biarkan selama 3 menit. Iris tipis- tipis dan disajikan.
