魚球伴什菜 – Sole Fillet with Assorted Vegetable


材料
2件 龍脷柳
50克 珍珠筍
50克 荷蘭豆
50克 甘笋片
8隻 香菇
8片 甜紅椒
1/2茶匙 薑茸
1/2茶匙蒜茸

醃料
1茶匙 雞粉
1湯匙 生粉
1湯匙 蛋白
少許 胡椒粉

做法
1.將龍脷柳洗淨抹乾切件加入醃料拌勻. 下鑊略炒至熟透,撈起,瀝乾油份,備用
2.將雜菜及香菇飛水至熟撈起,瀝乾,備用
3.燒熱1湯匙油爆香薑茸、蒜茸,將魚柳和雜菜及香菇回鑊炒勻加少許鹽調味上碟,即可供食

Ingredient
2pc sole
50 g baby corn
50 g pea
50 g carrot
8 pcs mushroom
8 pcs red bell pepper
1/2 tsp chopped ginger
1/2 tsp chopped garlic

Marinade
1tsp chicken powder
1tbsp corn starch
1tbsp egg white
pinch of pepper

Cooking Method
1.Rinse the sole fillet and cut into pieces, marinate. Fry until cooked and set aside.
2.Poach assorted vegetable and mushroom. Drain and remove.
3.Heat 1 tbsp oil to sautee ginger and garlic. Then, add in fish and vegetable. Add a pinch of salt. Ready to serve.

Paraan ng pagluluto
1.Hugasan ang malapad na isda at hiwain ng ilang piraso. Tapos, ibabad, Iprito at itabi.
2.Pakuluan ang sari-saring gulay at kabute, patuyuin at alisin.
3.Mag-init ng isang kutsarang mantika para igisa ang tinadtad luya at tinadtad bawang. Tapos, idagdag ang isda at gulay.Ihalo ng kaunting asin. Handa ng ihain.

Bahan
2lbr iken sole
50gr jagung muda
50gr kapri
50gr wortel
8biji jamur
8 iris paprika merah
1/2 sdt pasta jahe
1/2 sdt pasta bawang putih

Bumbu
1sdt chicken powder
1sdm tepung sagu
1sdm putih telur
sedikit lada

Cara Memasak
1.Cuci dan potong ikan sole. Bumbui dan sisihkan.
2.Siangi sayuran dan jamur. Angkat dan tiriskan.
3.Panaskan 1 sdm inyak untuk menu-mis pasta jahe dan bawang putih. Kemudian, masukkan ikan dan sayu- ran. Tambahkan sedikit garam. Saipuntuk disajkan.
