炒蟹肉海鮮 – Sauteed Crab Meet and Seafood


材料
2隻 大蟹
10隻 蛋白
40克 帶子
40 克 蝦仁粒
少許薑茸

做法
1.將大蟹蒸熟拆肉成蟹粉,用少許熱油爆香薑茸及蟹粉爆香,備用
2.將帶子、蝦仁粒用熱水浸至變色即可
3.燒熱鑊落少許油,打勻蛋白倒入慢火推炒蛋白至凝固,加入帶子、蝦仁粒及調味料炒勻,盛在碟上,再放上蟹粉,食時拌勻即可

40g diced scallop
40g diced shrimp
Some chopped ginger

Some sugar

Cooking Method
1.Remove crab meat and fat, sauté with chopped ginger and set aside.
2.Poach the scallop and shrimp in hot water.
3.Heat the wok with oil. Then, pour in egg white and fry until condensed. Then, add in scallop, shrimp and seasonings. Place it onto the plate. Sprinkle with crab meat and ready to serve.

Paraan ng pagluluto
1.Alisin ang laman ng alimasag at igisa ang lamang ng alimasag. Igisa ang luya sa mantika. Pagkatapos, lsunod ang alimasag. At itabi.
2.Pakuluin ang scallop at hipon sa mainit na tubig.
3.Initin ang kawali na may mantika, pagkatapos, ibuhos ang puti ng itlog at igisa hanggang lumapot. Isunod na ilagay ang scallop, hipon at panimpla, ilagay sa ibabaw ng plato. Budburan ng pulbos ng talangka at ihain.

2 ekor kepiting berbulu dada
10 butir putih telur
40 gr scallop cincang
40 gr udang cincang
jahe cincang secukupnya

Bumbu-Bumbu
Garam secukupnya
Lada secukupnya

Cara Memasak
1.Angkat daging dan telur dari kepiting. Tumis jahe dan daun bawang dengan minyak. Kemudian masukkan telur kepiting. Sisihkan.
2.Rebus scallop dan udang air panas.
3.Panaskan wajan dengan minyak. Kemudian tuang putih telur dan goring hingga berasap. Kemudian, masukkan scallop, udang dan bumbu-bumbu. Letakkan diatas kerang. Taburi dengan telur kepiting dan siap untuk disajikan.
