蛋白炒蟹 – Sautéed Green Crab with Egg White


材料
2隻花蟹
3隻蛋白
1/4杯上湯
少許蔥絲
少許薑絲

調味料
1/4茶匙鹽
少許紹酒
少許胡椒粉

做法
1.將花蟹劏開,洗淨,斬為兩件,用廚房紙吸乾水份後,放入熱油中泡油王金黃,撈起,備用
2.燒熱少許油爆香蔥絲、薑絲,注入上湯煮滾,將蟹回鑊煮至蟹熟,將蛋白打至企身,加入兜勻,加入調味料煮勻,即可上碟

Ingredient
2 pieces green crab
3 pieces egg white
1/4 cup stock
Some shredded spring onion
Some shredded ginger

Seasoning
1/4 tsp sale
Some Shaoxing wine
Dash of pepper

Cooking Method
1.Cut the crab into halves and rinse. Then, deep-fry until golden brown and set aside.
2.Heat the oil to sauté the spring onion, ginger, and stock. Then, place back the crab. Beat the egg white until firm. Then, add in the egg white and seasonings. Ready to serve.

Paraan ng pagluluto
1.Hugasan at hatiin ang alimasag, ipritong-lubog
2.Igisa ang luya at murang sibyas, ibuhos ang sabaw at panimpla. Ilagay muli ang alimasag at lutuin hanggang maluto. Prituhin ang batiin na itlog. Ihain.

Bahan
2 ekor kepiting
3 putih telur
1/4 gls kaldu
Sedikit daun bawang
Sedikit jahe

Bumbu-Bumbu
1/4 sdt garam
Sedikit arak Shaoxing
Lada secukupnya

Cara Memasak
1.Potong kepiting menjadi duadan cuci. Kemudian goreng hingga coklat keemasan dan sisihkan.
2.Panaskan sedikit minyak untuk menumis jahe,daun bawang dan kaldu. Kemudian, masukkan kembali kepiting. Kocok putih telur hingga kaku. Kemudian masukkan putih telur dan bumbu-bumbu. Siap untuk disajikan.
