香茅黃花魚 – Lemon Grass Yellow Croaker


材料
500克 黃花魚
2段鮮香茅段
150克 青椒
150克 紅椒
50克 洋蔥
6片 九層塔
50克 酸子羔

200克 茄汁
1湯匙 雞粉
1/2 茶匙 鹽
3湯匙 糖
100克 水

做法
1.將黃花魚洗淨抹乾水份,用少許鹽搽勻後撲上生粉煎透至熟、備用
2.將調味料加入香茅,酸子羔,九層塔煮透即汁水
3.燒熱少許油將青、紅椒、洋蔥爆香加入煮好汁水同爆透後,淋上魚面上碟便成

50g green bellpepper
50g red bell pepper
50g chopped onion
6pcs Thai sweet basil
50g tamarind paste

Seasoning
200g ketchup
1tbsp chicken powder
1/2 tsp salt
3tbsp sugar
100g water

Cooking Method
1.Rinse the yellow croaker and absorb the water. Slightly slice the surface. Then, brush on with some salt and corn starch. Then, pan-fry until done.
2.Mix the seasonings with lemon grass, tamarind paste and Thai sweet basil, then, cook into sauce.
3.Heat some oil to sautee bell peppers and spring onion. Then, add in the sauce. Pour onto the fish and ready to serve.

Mga Sangkap
500 gramo Yellow Croaker
2 pirasong sariwang tanglad
50gramo berdeng sili
50gramo pulang sili
50gramo tinadtad na sibuyas
6pirasong Thai sweet basil
50gramo pasting tamarind

Panimpla
200gramo ketsap
1kutsarang pulbos ba manok
1/2kutsaritang asin
3kutsarang asukal
100grano tubig

Paraan ng pagluluto
1.Hugasan ang yellow coaker at ipasipsip ang tubig. Hiwain ng bahagya abg ibabaw. Tapos, pahiran ng kaunting asin at ari-nang mais.. Tapos, iprito hanggang maluto.
2.Ihalo ang panimpla sa tanglad, pasting tamarindat Thai sweet basil, tapos, pakuluin.
3.Maginit ng mantika para igisa ang lahat na mga sili at sibuyas. Tapos, idagdag ang sarsa. Ibuhos sa isda at handa ng ihain.

Bahan
500 gr ikan yellow croaker
2batang serai segar
50gr paprika hijau
50gr paprika merah
50gr bawang bombai cincang
6lembar kemangi Thailand
50gr pasta tamarin (assam paste)

Bumbu-Bumbu
200gr saus tomat
1sdm chicken powder
1/2sdt garam
3sdm gula
100gr air

Cara Memasak
1.Cuci ikan dan serap airnya.Dengan ringan iris pada permukaannya. Kemudian, olesi dengan sedikit garam dan tepung sagu. Kemudian goring hingga matang.
2.Campur bumbu-bumbu dengan serai, pasta asam dan kemangi, kemudian masak hingga menjadi saus.
3.Panaskan sedikit minyak untuk menu-mis semua paprika dan bawang bombaii. Kemudian, masukkan saus, Tuang diatas ikan dan siap untuk dis-ajikan.
