腐乳炒粉絲 – Vermicelli with Preserved Beancurd


材料
4兩 免治豬肉
2粒 乾蔥茸
1茶匙 蒜茸
1包 泰國粉絲
1/2杯 雞湯

3磚 腐乳
3茶 匙糖
少許 麻油
少許 辣椒碎
2湯匙 水

醃料
少許 生抽
少許 糖

做法
1.將免治豬肉加醃料5分鐘. 將粉絲用水浸軟洗淨﹐灑乾水份備用
2.燒熱1湯匙油﹐爆香乾蔥茸﹐下粉絲略炒﹐下雞湯﹐炒至粉絲熟透﹐此時下少許生抽及胡椒粉調味﹐兜勻﹐息火盛起
3.另燒熱2湯匙油﹐爆香蒜茸及豬肉﹐代豬肉炒至半熟﹐下腐乳爆透﹐再下其他汁料﹐待豬肉熟透盛在粉絲上, 即成.

Ingredient
160 grams of minced pork
2 pieces of shallot
1 tsp of chopped garlic
1 tbsp of chopped parsley
1 pack of vermicelli
1/2 cup of chicken stock

Seasoning
Sauce:
3 pcs of preserved beancurd
3 tsp of sugar
some sesame oil and chopped chili
2 tbsp of water

Marinade
Some soy sauce
Some Sugar

Cooking Method
1.Marinate minced pork with marinade for 5 minutes. Soak vermicelli, rinse and absorb water
2.Sautee shallot in 1 tbsp of oil, add in vermicelli, pour in chicken stock. Add some soy sauce and pepper. Remove from fire and place in a dish.
3.Sautee garlic and minced pork in 2 tbsp of oil, add in preserved beancurd and other sauce ingredients. When pork is done, put on top of vermicelli.

Mga Sangkap
160 gramo giniling na baboy
2 pirasong sibuyas tagalong
1 kutsaritang tinadtad na bawang
1 balot ng sotanghon
1/2 tasang sabaw ng manok

Panimpla
Sarsa:
3 pirasong preserved beancurd
3 kutsaritang asukal
kaunting langis ng linga
kaunting tinadtad na sili
2 kutsarang tubig

Pambabad
Kaunting toyo
Kaunting asukal

Paraan ng pagluluto
1.Ibabad ang giniling na baboy sa pambabad ng 5 minuto. Ibabad ang sotanghon, hugasan at ipasipsip ang tubig.
2.Igisa ang sibuyas tagalog sa 1 kutsarang mantika, idagdag ang sotanghon. Haluin ang sabaw ng manok. Dagdagan ng kaunting toyo at paminta. Patayin ang apoy at ilagay ang sotanghon sa plato.
3.Igisa ang bawang at baboy sa 2 kutsarang mantika. Idagdag ang preserved beancurd at ibang sangkap ng sarsa. Pagnaluto na ang baboy, I lagay sa ibabaw ng sotanghon.

Bahan
160 gr daging babi giling
2 biji bawang merah
1 sdt bawang putih
1 pak bihun
1/2 gls kaldu ayam

Bumbu-Bumbu
Saus:
3 sdt gula
3 potong Preserved beancurd
sedikit minyak wijen
sedikit cabe cincang
2 sdm air

Bumbu
Kecap asin secukupnya
Gula secukupnya

Cara Memasak
1.Bumbui daging babi selama 5 menit. Rendam bihun, cuci dan tiriskan
2.Panaskan 1 sdm minyak untuk menumis bawang merah. Kemudian, masukkan bihun. Tuang kaldu ayam. Kemudian masukkan sedikit kecap asin dan lada. Kemudian matikan api dan letakkan bihun diatas piring
3.Panaskan 2 sdm minyak untuk menumis bawang putih dan daging babi. Ketika daging babi setengah matang, masukkan preserved beancurd dan bahan saus lainnya. Setelah daging babi matang, letakkan diatas bihun. Disajikan
