香辣豆豉雞 – Spicy Black Bean Chicken


材料
1/2 隻雞
1個青椒
2 個紅辣椒
4粒乾荵頭
5片薑
1茶匙蒜茸
1湯匙豆豉

1/4茶匙鹽
1茶匙糖
2茶匙老抽
2茶匙蠔油
2湯匙水
少許麻油
少許胡椒粉
少許粟粉水

醃料
1/2 茶匙鹽
1/2 茶匙糖
1/2 茶匙生抽
1/2 茶匙紹酒
1茶匙粟粉
少許胡椒粉

做法
1.將雞洗淨, 切件. 加入醃料拌勻.
2.將青,紅辣椒切件; 荵頭去衣, 略拍.
3.燒熱少許油, 將雞件炒至金黃色. 盛起.
4.在1湯匙油爆香乾荵頭, 蒜茸, 青椒及紅辣椒, 加入豆豉兜勻.
5.加入雞件略炒, 加入調味料拌勻. 加入粟粉水煮至汁料收乾.

Ingredient
1/2 pc of Chicken
1 pc of green bell pepper
2 pcs of red chili
4 pcs of dried onion
5 slices of ginger
1 tsp of mashed garlic
1 tbsp of black beans

Seasoning
1/4 tsp of salt
1 tsp of sugar
2 tsp of dark soy sauce
2 tsp of oyster sauce
2 tbsp of water
Some sesame oil
Some pepper
Some cornstarch water

Marinade
1/2 tsp of salt
1/2 tsp of sugar
1/2 tsp of soy sauce
1/2 tsp of shaoxing wine
1 tsp of cornstarch
some black pepper

Cooking Method
1.Rinse Chicken and cut into pieces, mix in marinade. Set aside.
2.Slice green bell pepper and red chili, Remove skin of dried onion and slightly pat with knife.
3.Fry chicken pieces until golden brown in little oil. Remove and set aside
4.Saute onion, ginger, garlic, green bell pepper and red chili in 1 tbsp oil and add in black beans stir well.
5.Add in chicken pieces and add in seasonings. Finally add in cornstarch water and cook until sauce thickens. Serve

Paraan ng pagluluto
1.Hugasan ang manok at ihiwa ng maliliit piraso, Ibabad sa pambabad.
2.Ihiwa ang berdeng sili at pulang sili. Balatan ang tuyong sibuyas at Paluin gamit ng kutsilyo.
3.Iluto ang manok hanggang mag kulay kayumanggi sa kaunting mantika at itabi.
4.Igisa ang bawang, luya, sibuyas, berdeng sili at pulang sili sa 1 kutsarang mantika, ihalo ang maitim na beans, haluin maigi.
5.Ihalo ang manok at panimpla. Iluto at ihalo ang arinang mais tubig at iluto hanggang maging malapot ang sarsa. Ihain.

Bahan
1/2 biji daging ayam
1 besar hijau
2 buah cabe merah
4 siung bawang merah
5 biji jahe
1 sdt bawang putih cincang
1 sdm tau si (hitam buncis)

Bumbu-Bumbu
1/4 sdt garam
1 sdt gula
2 sdt kecap hitam
2 sdt minyak kerang
2 sdm air
sedikit minyak wijen
sedikit lada
sedikit air panas tepung jagung

Bumbu
1/2 sdt garam
1/2 sdt gula
1/2 sdt kecap asin
1/2 sdt shaoxing arak
1 sdt tepung jagung
sedikit lada

Cara Memasak
1.Cuci Daging ayam, potong tipis-tipis, campur bumbu-bumbu1.
2.Potong tipis besar hijau dan cabe merah. Memarkan bawang puith.
3.Panaskan sedikit minyak, masakkan daging ayam hingga warna coklat
4.Panaskan 1 sdm minyak, campur besar hijau, bawang merah,. Cabe merah, bawang putih cincang, dan jahe. Campur tau si.
5.Campur daging ayam, kekacauan. Masukkan air tepung jagung, juru masak hingga saus pengeringan. Sajikan.
