醬油炒上海年糕 – Sauteed Shanghai Rice Cake


材料
1包上海年糕
1個冬荀肉
4隻冬菇
3湯匙毛豆仁
2件厚薑片
3條荵白

1湯匙老抽
1湯匙海鮮醬
1/2茶匙砂糖
3/4杯清湯
少許麻油
少許胡椒粉

做法
1.將毛豆仁以滾水略燙, 過冷河
2.將冬菇浸軟, 切絲
3.冬荀肉放入清水略煮5分鐘, 過冷河, 切片
4.把年糕切厚片, 將所有調味料放在小碗伴勻
5.燒熱2湯匙橄欖油, 以高溫爆香薑及荵白, 加入冬荀, 毛豆及冬菇略炒, 灑上少許酒, 再倒入調味料煮滾. 然後加入年糕, 以中火加蓋煮3分鐘. 開蓋炒至汁料收乾. 灑上少許麻油即成.

Cooking Method
1.Blanch soy beans, rinse and drain.
2.Soak mushroom until soft, drain
3.Boil Bamboo Shoots for 5 minutes and drain.
4.Cut rice cake into thick slices. Mix seasonings in small bowl.
5.Heat 2 tbsp of olive oil, sautee onion and ginger, add in bamboo shoots, soy beans and mushroom, stir-fry. Sprinkle with some wine, Add in Seasonings, let it boil. Then add in rice cake, cover and cook for 3 minutes. Remove cover and stir-fry until sauce thickens. Sprinkle with some sesame oil and Serve.

Paraan ng pagluluto
1.Banilan ang soya beans, hugasan at patiktikin
2.Ibabad ang kabute sa tubig at ihiwa ng manipis nipis
3.Lutuin ang lubong ng 5 minuto at patiktikin
4.Hiwain ang rice keyk ng makapal-kapal. Ihalo ang mga panimpla sa maliit na tasa.
5.Painit ng 2 kutsarang olive oil, igisa ang sibuyas at luya, at ihalo ang kabute, labong at soya beans. Haluin maigi at wisikan ng Chinese Alak. Ihalo ang panimpla at pakuluin. Ihalo ang rice keyk, takpan at paluto ng 3 minuto. Buksan ang takip at ihalo hanggang matuyo ang saus. Wisikan ng kaunting sesame oil. Ihain.

Cara Memasak
1.Siangi kedelai, cuci dan tiriskan
2.Rendam jamur dan ptong besar-besar.
3.Rebus rebung utuhan yang tlah dikupas selama 5 menit. Cuci hinga bersih dan iris tipis-tipis.
4.Potong rice cake tebal-tebal. Campur bumbu-bumbu dalam mangkok kecil dan sisihkan.
5.Panaskan wajan dengan 2 sdm minyak zaitun kacang dengan api besar. Masukkan jahe dan daun bawng dan tumis hinnga harum. Masukkan rebung, kedelai, dan jamur dengan sedikit arak China, biarkan sesaat kemudian masukkan bumbu-bumbu dan didihkan. Masukkan rice cake diatasnya dan tutup untuk dimasak dengan api sedang selama 3 menit. Buka tutupnya dan didihkan hingga saus kental. Taburi dengan sedikit minyak wijen sebelum disajikan.
