香茅羊仔柳 – Fried Lamb Fillet in Herbs


材料
230克 羊仔柳
1茶匙 蒜茸
1條香茅枝
40克 洋蔥
1條 西芹

1茶匙 茴香粉
1茶匙 雞粉
1/3茶匙 鹽
1/3茶匙 糖
1/3茶匙 峇拉煎醬
1湯匙 米酒

做法
1.將羊仔柳切粗粒用小茴粉、鹽、糖、雞粉醃
2.鑊燒熱下油爆香蒜茸,放下羊仔柳炒至六成熟起鑊,備用
3.再起鑊炒香香茅、洋蔥、西芹,再下峇拉煎醬爆香,跟著放入羊仔柳炒至八成熟,灒米酒起鑊上碟,即可供食

Ingredient
230 g lamb fillet
1 pc lemon grass
1 pc celery
1 tsp chopped garlic
40 g Onions

Seasoning
1 tsp cumin powder
1 tsp chicken powder
1/3 tsp salt
1/3 tsp sugar
1/3 tsp of belacan sauce
1 tbsp rice wine

Cooking Method
1.Chop the lamb fillet into pieces. Then, marinate it with cumin, salt, sugar and chicken powder.
2.Sautee the garlic with olive oil. Then, add in the lamb and cook until 60 % done.
3.Sautee the lemon grass, onion, celery with belacan sauce. Put back the lamb and fry until 80% done. Pour in rice wine and ready to serve.

Mga Sangkap
230 gramo hiniwang kordero
1 pirasong tanglad
1 pirasong kintsay
1 kutsaritang tinadtad bawang
40 gramong sibuyas

Panimpla
1 kutsaritang kamon
1 kutsaritang pulbos na manok
1/3 kutsaritang asin
1/3 kutsaritang belacan sauce
1 kutsarang alak na bigas
1/3 kutsaritang asukal

Paraan ng pagluluto
1.Tadtararin ang hiniwang kordero ng ilang pirasa. Tapos, ibabad sa kamon, asin, asukal at pulbos na manok.
2.Igisa ang bawang sa mantika. Tapos, idagdag ang kordeno at iluto ng 60%.
3.Igisa ang tanglad, lahat ng bawang, sibuyas, kintsay at belaccan sauce. Ibalik ang kordeno at iprito ng 80% na luto. Ibuhos ang alak na bigas at handa ng ihain.

Bahan
230 gr fillet lembu
1 batang serai
1 batang seledri
1 sdt bawang putih
40 gr bawang bombai

Bumbu-Bumbu
1 sdt cumin
1 sdt chicken powder
1/3sdt garam
1/3 sdt gula
1/3 sdt saus belacan
1 sdm rice wine (arak beras)

Cara Memasak
1.Potong fillet lembu menhadi beberapa potong. Kemudian bumbui dengan cumin, garam, gula dan chicken powder.
2.Tumis bawang putih dengan minyak. Kemudian, masukkan daging lembu dan masak hingga matang 60 %.
3.Tumis serai, simua, bawang bombai, seledri dengan belacan. Masukkan daging lembu dan goreng hingga matang 80%. Tuang arak dan siap untuk disajikan.
