西芹炒雙魷 – Fried Celery and Squids


材料
240 克鮮魷
120 克乾鮮魷
2 件豆腐乾
2 條西芹
1 茶匙薑茸
1 茶匙蒜茸
少許甘荀

1 湯匙水
1 茶匙雞粉
1/2 茶匙鮮露
1/2 茶匙蠔油
1/2 茶匙糖
1/2 茶匙鹽

做法
1.將鮮魷去衣、介花、切件;乾鮮魷用凍水浸軟、去衣、介花、切件;將豆腐乾、西芹、甘荀切片
2.將鮮魷、乾鮮魷、豆腐乾、西芹、甘荀在滾水灼熟,瀝乾水份
3.用少許油爆香薑茸及蒜茸,加入其他材料炒香,下調味料炒勻,用粟粉水埋芡汁再灑少許酒,即成

Ingredient
240 g fresh squid
120 g dried fresh squid
2 pcs of dried tofu
2 stalk of celery
1 tsp chopped garlic
1 tsp chopped ginger
Some Carrots

Seasoning
1 tbsp water
1 tsp Chicken Powder
1/2 tsp Liquid Seasoning
1/2 tsp Oyster Sauce
1/2 tsp Sugar
1/2 tsp Salt

Cooking Method
1.Skinned, scored and sliced fresh squid, Soak dried squid with cold water until soft and skinned, scored, sliced, Slice tofu, celery and carrots
2.Boil water and blanch squids, tofu, celery and carrots, drain and set aside
3.Sautee garlic and ginger, add in all ingredients stir-fry and add seasonings mix well. Thicken sauce with some cornstarch water, sprinkle with some wine and serve

Paraan ng pagluluto
1.Balatan ang sariwang pusit at iguhit gamit ng kutsilyo ang likod ng pusit at ihiwa; ibabad ang tuyong pusit hanggang malambot at balatan, iguhit at ihiwa. Ihiwa ang tahu, kintsay at karot
2.Magpakulo ng tubig at iluto sandali ang mga pusit, tahu, kintsay at karot, patiktikin at itabi
3.Igisa ang luya at sibuyas, ihalo ang lahat ng mga sangkap at panimpla, ihalo maigi. Palaputin ang sarsa ng kaunting arinang mais tubig. Budburan ng kaunting alak at ihain.

Bahan
240 gr segar cumi-cumi
120 gr kering cumi-cumi
2 buah kering tahu
2 daun seledri
1 sdt cincang bawang
1 sdt cincang jahe
Sedikit wortel

Bumbu-Bumbu
1 sdm air
1 sdt bedak ayam
1/2 sdt saus tiram
1/2 sdt gula
1/2 sdt garam

Cara Memasak
1.Mengupas segar cumi-cumi dan potong tipis-tipis, Rendam lemas kering cumi-cumi dan mengupas. Potong tipis tipis. Potong tipis-tipis tahu, daun seledri dan wortel.
2.Panaskan air dan campur, cumi-cumi, tahu, daun seledri dan wortel, tiriskan dan tersisih.
3.Masukkan bawang dan jahe, campuran semua bahan, membuar dengan baik dan memanbahkan bumbu. Menaruh sedikit tepung jagung hingga saus menebal, tetesan sedikit arak. Disajikan.
